Sweet Plantain Pie-Shaped Bread By Nma



My friend graduated at church and I decided to do something extra special for him. Apart from my chicken stew, I really wanted to bake him something sweet. I went roaming in my kitchen and I found two over ripe plantains. As usual, I never bin them; I always find something to do with left overs.

I decided to do a plantain bread, but for some reason I grabbed the pie dish instead of the loaf pan; Hence the name “pie”. The name “pie” is the only difference this dish has from the regular loaf. If you want to make some plantain bread, this is also a recipe to follow. I could have used the regular loaf pan, but I had already greased the pie dish, and it would taste the same anyway.

I have to say I am pleased with this recipe. Trust me, I do not bake, so when this pie (bread) turned out great I was beside myself with happiness and I was also the best mommy in the whole wide world. I have two left feet when it comes to baking, but pleasing my child was my priority and I am grateful for that. Thank you to my friend who excitedly baked with me and was too happy doing it.



  1. 2 over ripe plantains
  2. 2 medium to large eggs at room temperature
  3. 1stick or ½ a cup of melted butter
  4. 11/2 cup of oat flour. Any flour works
  5. ⅓ – ½ cup of brown sugar. You may use less or more. You may also substitute with any type of sugar
  6. 1tbsp oat meal
  7. ¼ tsp of salt
  8. 1tbsp of baking powder
  9. 1tsp of baking soda
  10. 2tsps of vanilla extract
  11. ¼ tsp of nutmeg (optional)
  12. 1-2tbsps desiccated coconut
  13. 4 tbsps. of any type of chopped nuts. I used walnuts and almonds
  14. 2tbsps of black currant or raisins


  1. pre heat oven to 350 degrees
  2. In a large mixing bowl, mash plantain until really mushy
  3. pour in all the ingredients and thoroughly combine
  4. Rub butter onto a pie dish or loaf pan and dust with a little flour. Pour in the batter and bake for about 45 minutes between 250-350 degrees


  1. You may reduce the heat of your oven depending on how hot your oven gets. I had reduce mine to 250 after the first 10minutes
  2. You may use a pie or loaf pan
  3. To make oat flour, just measure out some regular oat meal and run it through a dry mill
