So many hearts have been won by jerk chicken, including ours. For this recipe you get to make the jerk sauce from scratch, super exciting right?! You are most likely familiar with majority of the ingredients, which makes this even easier. Join us on this delicious adventure!
4 pcs chicken drumstick
4 pcs chicken thighs
4 pcs garlic cloves
4 pcs spring onions
2 tbsps chilli powder (atagungun)
3 teaspoons garlic powder
1 tbsp ground ginger
1 tbsp thyme
2 teaspoons chicken seasoning powder
2 teaspoons brown sugar
1 teaspoon onion powder
Preheat the oven to 350°F. Clean the chicken and pat dry.
To prepare the marinade, blend all spices with the spring onions and 4 garlic cloves. Pour little water into a pot and add the chicken and marinade.
Slow cook for about 8 minutes, continuously stirring so the marinade covers the chicken (use this approach if you are using chicken that is tough e.g. broiler). For softer chicken just pour marinade over and place in a resealable bag for a couple of hours to marinate.
Place the chicken on a foil covered baking tray. Allow to cook for about 35 minutes or until well done, making sure to check that the chicken does not burn.
Allow to cool for a while before serving.
