For lovers of plantain and small chops, this is a two in one special. This yummy snack is in between puff-puff and fried plantain…it cannot get any better! If you would like yours spicy feel free to add in chilli pepper, but for this we went all sweet. What is small chops without mosa?
3 pcs overripe plantain
1 cup plain flour
2 teaspoons yeast
3 tbsps sugar
1 teaspoon nutmeg powder
1 teaspoon vanilla essence
3 cups vegetable oil
1 pinch salt
Pour the yeast into a bowl of warm water, mix until there are no lumps and set aside for about 15 minutes.
Peel the plantains (ideally overripe) and mash until smooth. You can use a blender or food processor to achieve the consistency required.
Mix flour, sugar and salt in another bowl. Add in the yeast solution and mix. Pour in the mashed plantain and mix with a spatula until well combined. Cover the bowl with a cling film and allow to sit for about 15 minutes.
Add in the nutmeg, vanilla essence and pepper (optional).
Add the oil into a deep pan and place over high heat. Reduce the heat after a while and scoop in the batter with your hands. Fry until golden brown.
Using a slotted spoon remove the mosa from the oil and allow the excess oil to drain on paper towel.
Best served warm. Sprinkle over confectioners’ sugar (optional).
