This hybrid bake is super yummy and irresistible. Duffins are a mixture of doughnut and muffins, hence the name. You get the best of both worlds in one! How great is that?! The cinnamon sugar coating gives it even more life. Get baking now!
1 cup plain flour
4 tbsps sugar
4 tbsps brown sugar
2 tbspsbaking powder
1 cups milk
5 tbspsunsalted butter
Preheat the oven to 350°F. Grease a 12-cup muffin pan. Mix flour, baking powder and salt. Set aside.
Mix butter, sugar, eggs and vanilla essence on medium speed using a paddle attachment in a mixer. Alternatively used a spatula if using your hand. Do this until the mixture is light and fluffy.
Scrape down the sides of the bowl and add in your milk. Mix slowly. Add in the dry items and mix until just combined. The batter should be quite thick.
Spoon the batter into the pan, filling each cup about ½ way. Bake for about 10 minutes or until the middle of the duffins are set and a toothpick comes out clean when inserted. Do not over bake.
For the coating – Melt some butter in the microwave, set aside. Mix sugar and cinnamon, set aside. After the duffins have cooled, dip each one in the butter first then in the sugar mix.
