This Groundnut Soup Has A Buttery Texture Yet Has The Naija Feeling!



Groundnuts are not just for snacking. This soup has a buttery texture yet has the Naija feeling! Do not underestimate the health benefits of this soup. Groundnut is a rich source of plant protein and contain high amount of folate which promotes fertility.



1 kg beef

1 pc smoked fish

3 pc rodo

2 cups groundnut

8 tbsp palm oil

1 pc onions

3 tbsp crayfish

1 pc dried fish

4 pcs tomato

1 tbsp ground pepper

1 bunch ugwu

2 tbsp nutmeg powder



Firstly wash the beef and smoked fish then set aside. Wash the dried fish with hot water then set aside. Chop the onions and ugwu then set aside.

Put the washed beef in a pot, add salt and seasoning cubes and cook for about 25 minutes. Add the smoked and dried fish and cook for about 5 minutes.

While cooking the beef, blend 2 cups of groundnut until smooth then set aside. Also blend the tomato and rodo then set aside

In a sauce pan, heat the the oil over medium heat. Add the chopped onions until translucent. Add the groundnut puree and allow to cook for about 10 minutes. Add the tomato and rodo puree and pour into the pot of beef and stock.

Add the crayfish and nutmeg and allow to cook for about 10 minutes. Add chopped ugwu and allow to simmer for about 3 minutes.

Serve hot with any staple of your choice!
