This Lemon Butter Chicken is bursting with flavor! The blend of butter, lemon, thyme and garlic is enough to make you want to try this. We chose boneless skinless chicken because they cook a bit faster. This is one meal you would choose over and over.
900 g boneless chicken
2 pcs lemon
2 pcs seasoning cubes
1 tsp thyme
1 tsp salt
60 g unsalted butter
1 tsp ground pepper
12 pcs garlic
3 tbsp olive oil
250 ml water
Heat the olive oil in a large fry pan over medium heat. Generously season the chicken with seasoning cubes, salt and pepper as desired and fry for about 10 minutes or until all the sides are brown.
Remove the chicken from the oil and reduce heat. Add ½ cup of water (or chicken broth). Scrape the bottom of the pan. Add the butter and garlic (halved).
Return the chicken to the pan and add ½ cup of water (or chicken broth). Cover and simmer for about 20 minutes, as the chicken cooks, add more water to avoid drying up. While the chicken cooks, squeeze out the lemon juice.
Add ¼ cup of lemon juice and 3 sprigs of thyme (optional). Check for salt and pepper and cook for about 10 minutes or until the chicken is tender and no pink remains.
Serve with rice, pasta, yam or potato.
